Blackened Shrimp with Bourbon Butter
6 Raw Peeled Shrimp
3 Tablespoons Cajun spice
2oz bourbon (spiced rum works as well)
Olive Oil
1 Tablespoon cold butter
1 tablespoon maple syrup
Turn on your fan and crack a window! Heat a dry non stick pan over medium high heat. Toss shrimp in about 1 – 2 tablespoons of olive oil, then into cajun spice and coat well. Have bourbon and butter ready. Place shrimp in pan and cook for about 2 minutes a side. When shrimp are cooked, remove from pan and add bourbon. Use a spatula nad scrape then bits off the pan, and add maple syrup and butter until melted and pour over shrimp. Enjoy the rest of the bourbon responsibly!
