Goats Cheese Vinaigrette w/ Burnham Family Farms Strawberries and Organic Greens
Fresh local strawberries are here, and in my opinion one of the highlights of the summer here in Northumberland. This salad makes a great summer lunch with some nice bread or a grilled breast of chicken for a light meal.
4oz of soft goat cheese
1/4 cup dry white wine
3 tbsp cider vinegar
1/2 cup good olive oil (not extra virgin)
1 tsp dijon mustard
Pinch of finely chopped rosemary and thyme
1 tsp maple syrup
1/2 cup toasted sliced almonds for garnish
Salt and lots of cracked pepper to taste
Put the olive oil and almonds aside and combine all other ingredients, and whisk until smooth. While whisking, slowly drizzle in the olive oil and whisk until velvety smooth. Slice as many strawberries that will tickle your fancy and sprinkle over the mixed greens. Dress when ready to serve and garnish with those tasty almond slivers. Booyah. Enjoy with a pint of gin with a tonne of ice and a lemon peel.
