Halibut with Mediterranean Salsa
Quick, easy and simple but always a crowd pleaser. You can substitute Halibut with just about any fish… or for that matter, anything.
2 6oz Halibut Fillets
For the Salsa
6 good green olives, pitted and sliced
6 good black olives, pitted and sliced
3 Roma tomatoes, seeds removed and diced.
6 Sundried tomatoes, chopped
3 leaves of fresh basil, chopped
1/2 red onion, chopped
1/2 cup of your best olive oil
1/4 cup balsamic vinegar
Combine all ingredients into a bowl, season with salt and pepper and drizzle with olive oil. Sear one side for about 2 minutes until a light brown crust forms. Bake halibut for 8-12 minutes until it almost flakes when you pinch the sides. Top with salsa and enjoy!
