Northside Monte Cristo with Maple Dijonaisse

This is my twist on an old classic, great for a late Sunday morning brunch!

Makes 2.
250g Smoked Ham
1 cup grated swiss cheese
4 slices of good crusty bread. (stale is better)
2 lg. eggs beaten
Butter
Maple Dijonaisse
2 good tbsp mayo
1 good tbsp dijon
1 tsp maple syrup
Heat a non stick pan over medium heat. Butter one side of bread and toast in pan until golden brown. With toasted side up, place cheese on al of the bread and pile on the ham and dijonaisse. Beat eggs in a large bowl. Form the sandwich’s and dip each side in pan with a bit of butter. Cook for about 3 minutes a side or until cheese has melted. Enjoy with a Heineken.
