Seared Salmon with Bushmills Maple Cream

Serves 2.

2 6 oz Salmon Fillets
2 oz Bushmills irish Whiskey
3 oz 35% cream
1/2 up dry white wine
Small pinch of nutmeg
1/2 cup chopped leeks
1 tbsp maple syrup
1 tbsp cold butter
olive oil
salt and pepper
-Preheat oven to 425º
- Heat non stick pan over medium high heat until hot.
Brush Salmon with olive oil and season with salt and pepper.
Sear (skin side up) until golden brown and place on a baking
sheet (skin side down) and bake for about 8 – 15 minutes until
firm to the touch. In the same searing pan sautee leeks in olive
oil until soft. Deglaze pan with Bushmills and reduce by half.
Add cream, maple, nutmeg and reduce by half again. Add butter
and season to taste with salt and pepper. Pour the sauce on a
plate and place the salmon on top. Sláinte!
