Warm Mushroom and Goat Cheese Salad
You can use any type of mushrooms. For flavour and texture contrast use a few different kinds.
For the dressing,
2 tablespoons goat cheese
Juice of 2 lemons
1 tablespoon dijon
1 teaspoon of horseradish
1/2 cup cider vinegar
1 teaspoon honey
1 cup of olive oil (good stuff)
Salt and Pepper to taste
2 tablespoons of poppy seeds
Combine all ingredients, except olive oil, in a food processor. When combined, slowly add olive oil until thick and creamy.
For the Salad
3 cups of sliced mushrooms
6 cups of spinach
1 clove of garlic, chopped
olive oil for sauteeing
Heat a small amount of olive oil in your biggest pan and sautee mushrooms until they start to sweat. Add half of the spinach and a good drizzle of the dressing. Place the remaining spinach in a bowl and pour warm ingredients over top. Drizzle with more dressing and enjoy! This is also delicious topped with chicken, salmon or beef.
